Pea Shoot Pesto

This pesto has been taken to another level! With a fresh bright flavor profile and nutritious. Great for pastas and can be used as a spread.

Total time: 20 minutes

2 Cups DMG Pea Shoots

¼ Cup Fresh Basil, 4 big leaves

1 Cup Spinach, blanched

¼ Cup Pine nuts

2 Garlic cloves, large

½ Cup Olive oil, high quality preferred

½ Cup Parmesan cheese, grated

Salt and pepper to taste

To Prepare:

Start by blanching your spinach, add water to a medium pot, add a pinch of salt then boil. Once boiling add spinach for 5-8 seconds. Remove from water with a slotted spoon. Transfer to a bowl of ice water, squeeze the excess water from the spinach.

Add pea shoots, fresh basil, and blanched spinach with all the other ingredients to a blender or food processor.

Blend until everything is blended rustic smooth. Add more Parmesan cheese and salt and pepper if needed.

Add the fresh pesto to your favorite pasta and enjoy!
