DMG Summer Pea Shoot Soup

DMG Summer Pea Shoot Soup

This soup will cool off anybody during the summer heat! Fresh, nutritious, and full of flavor.

Prep time: 10 minutes  Cook time: 20 minutes  Total time: 30 minutes

Ingredients:

½ Pound DMG Pea Shoots

¼ Cup frozen petite peas

1 Large shallot, diced

1 Garlic clove, minced  

1 tbl. Unsalted butter

2 Cups vegetable stock

Fresh mint, 2 larger leaves

¼ Cup heavy cream

Crème fresh for garnish (optional)

Salt and pepper to taste

To prepare:

In a medium pot, melt butter on medium low heat. Add shallots and garlic to pot and cook for 5-8 minutes until soft but not brown.

Add vegetable broth then increase heat till broth is boiling, add peas then simmer for 2-3 minutes.

Add soup to food processor along with mint and heavy cream, salt, and pepper. Blend until smooth.
